No chilled or frozen product should change states during handling. Baked goods, due to their low density, are particularly susceptible to such changes. As a result, as a standard procedure, we move baked goods from the dock to the freezer within 30 minutes. This can be even more important with customers who deliver par-baked goods that have been cooled to 28° F and require further freezing by us.
Baked good are also expiry date sensitive. We perform FIFO management for all our customers, and give access to all inventory controls to them as well.
Mullica Hill Group personnel case pick and consolidate pallets frequently for our customers. With some baked goods companies, we QC receipts from outsourced bakeries as we consolidate different products for delivery.
